Discover the Art of Crafting a Classic Regional Pie with Trinity Farm

At the environs of the village of Agia Triada, 40 km south of Larissa and 40 km west of Volos, The Trinity Farm occupies a piece of land that has belonged to the family for three generations. The farm covers about 40 hectares in Thessaly, where organic and biodynamic cereal, legumes, and horticultural products are cultivated.

Fully embracing biodynamic agriculture approved by Demeter International, the farm operates as a living organism — animals are fed using the farm’s own products, and in turn provide raw materials for nourishing the land. The cereal is ground in a stone mill for flour used in particular types of pasta, while a small herd of sheep and poultry round out the system.

This Thessaly cooking class begins with gathering wild greens from the farmland, where participants learn to identify and harvest edible flora indigenous to the region. The session then moves into crafting a traditional Sarakatsani pie, renowned for its simplicity and unparalleled flavor.
